Chicken "Shape and Bake"
Here's a double tasty bonus: two great chicken entree recipes in one. Both feature a special crunchy coating made with Shapers, but each has its own flavoring to give you more variety in your shapely diet. For you Ranch hands, you'll use Shapers™ Sea Salt Whole Grain Chips. For those who prefer their flavor come from South of the Border, you'll be crunchin' in a coating made with Shapers™ Black Bean & Salsa Whole Grain Chips.
Either way, you have a low fat, more healthful meal entree alternative, skinless chicken breasts coated in the whole grain goodness of crispy Shapers chips. Go ranch or go South, you're going there with 0 grams of trans fat in the Shapers Sea Salt Whole Grain Chips or Shapers Black Bean & Salsa Whole Grain Chips.
Ingredients
4 skinless, boneless chicken breasts
1 large egg
Crunchy Chip Coating (Ranch or South of the Border)
Nonstick spray
Ranch Coating:
3 cups Sea Salt Shapers Whole Grain Chips
1 envelope Ranch dressing mix
South of the Border Coating:
3 cups Black Bean and Salsa Shapers Whole Grain Chips
1 teaspoon onion powder
1/4 teaspoon pepper
Directions
Heat oven to 400 degrees. Line a shallow roasting pan with foil and coat with non-stick cooking spray. In a shallow bowl, lightly beat egg. Coat chicken breasts in egg, one at a time.
Place desired coating ingredients into a plastic food bag and crush using a rolling pin. Place chicken breasts, one at a time, into plastic bag and shake to coat evenly.
Place in prepared pan and lightly coat chicken breasts with cooking spray. Bake 30-35 minutes or until chicken is cooked through and coating is brown.
